Jade Lantern opened in 2015 when Chef Wei brought his grandmother's recipes across the Pacific - hand-cut noodles, chili oil made fresh daily, and a wok fired hotter than most kitchens can manage.
Every dish still passes through his hands before it leaves the kitchen.
