Ember started as a single griddle in a friend's backyard. Now it's a 30-seat room in the West Village, still cooking the same 45-day dry-aged blend over an open flame, still smashing every patty to order.
No frozen patties. No microwave. Just fire, beef, and a bun we bake ourselves.
